Chipotle Lime Chicken Salad

 

By far one of my favorite Lunchbox meals! This salad was created purely because of the mayo. Has anyone else noticed the amazing assortment of condiments at the grocery store these days? Since most of us are either flying through the aisles collecting the essentials or quickly adding the basics to your online shopping cart, I’m here to tell you that the days of plain ketchup and mustard are over. 

And I’m not just talking about the new craze of the Heinz Mayochup. From Kraft garlic aioli to Hidden Valley pizza flavored ranch, there is a cornucopia of ideas and recipes that can be created from these base ingredients. 

Enter The Chipotle Chicken Salad. 

When it comes to flavor this sandwich has it all.  Loaded with colorful sweet peppers, juicy chicken breast, cilantro, and it’s star creamy dreamy chipotle lime mayo, it’s more than your typical chicken salad. A southwest twist on an American classic that is sure to nourish dancers of all ages.

The ingredients in this satisfying sandwich are filled with antioxidants, Vitamin K, and good sources of lean proteins, this meal provides heart health and bone mass building capabilities. 

Not only does this chicken salad pack a punch of flavor, but its quick to assemble, best prepared the night before and last for up to five days in the fridge.

Perfect for satisfying leftovers anytime of day.

For this recipe I used Primal Kitchens Chipotle Lime Mayo and I highly recommend it, but feel free to use any brand you like! As I mentioned before, there are loads of new and fun condiments out there. 

 TIP: If you’re dancers are not up for trying cilantro that’s OK! For some people cilantro can have a soapy taste and if that is the case just substitute for fresh spinach or Italian parsley leaves.  

Tip II : Lining your baking sheet with aluminum foil will save you the stress of washing grease coated pans that never seem to come fully clean. The foil will save not just your time scrubbing, but it will save your pan and make for many more good uses. 

Recipe Below: 

Ingredients:

2-4 Chicken breast (depending on the size of your family)

Primal Kitchens Chipotle Lime mayo

1 cup cilantro

1 cup diced orange and red sweet peppers

Salt & Pepper to taste. 

Instructions:

Place the chicken on an aluminum lined baking pan and drizzle with your favorite olive oil. Season each chicken breast with salt & pepper to taste before placing in the oven and cooking at 400 degrees for 30-35 minutes or until the internal temperature is 165 degrees. Remove from the oven and allow to completely cool to the touch.

Meanwhile, begin chopping sweet peppers into diced, bite sized pieces. Cilantro leaves can be removed from their stems and rough chop 1 cup or you can use the stems to for extra flavor. Slice lime in half and set one round to the side for later and cut the other into wedges. 

Once chicken is cooled, cut into 1 inch bite sized pieces or you can use a serrated knife and shred the chicken. Either option will work for this recipe. 

Place the chicken, sweet peppers, cilantro, chipotle lime mayo and the juice from the other half lime in a bowl. Gently fold the ingredients in with the mayo and combine completely. 

Add salt & pepper to taste and give it one more stir before refrigerating for a minimum of one hour to marry the ingredients and create that bold flavor. 

Feel free to pile on more cilantro leaves and a squeeze of lime for a extra zesty crunch a top a soft Kaiser roll.
