The secret to these travel ready skewers is, of coarse, the Caesar dressing. I used FOOD Network Kitchen Inspirations Creamy Parmesan Caesar dressing.

As if I were eating out at a restaurant instead of backstage going on my 8th hour of competition. Plus it’s a necessary & helpful time saver and we all need those!
Now on to the other two stars of this lunchbox meal; Chicken tenderloins & Romaine lettuce.
I love using chicken tenders in my recipes. They are budget friendly and quick to cook thawed or frozen. These specific tenders were seasoned simply with salt and pepper, baked in 35 minutes and ready for the road!
Last ingredient is the crisp Romaine lettuce.
I love romaine and I always use it in my salads… all the salads 🙂
With high levels of antioxidants, Vitamin K, which promotes bone health and has been known to boost immunity, this green is more than just a crunchy side to a juicy chicken.
But be cautious when purchasing. Romaine lettuce has been recalled recently due to an E.Coli outbreak. Articles I’ve read suggest that it is safer to purchase a head of romaine v.s the pre-cut, pre-packaged selections, but nothing is a 100% guarantee. Feel free to substitute this green with Ice burg lettuce or fresh spinach leaves if you choose.
As always, I encourage dancers to help in the kitchen, but be careful when assembling the kabobs. Skewers are sharp guys! However, helping prepare the romaine leaves is a great job for young dancers.
