Instant Pot Beef Tacos

I have a confession to make… I just recently discovered the Instant Pot.

Its true that the Instant Pot has been the top Multi-cooker since 2010, however I only recently decided to make the leap and embrace this amazing kitchen miracle.

Why you ask?

I was apprehensive at first because pressure cookers are a little scary! The only ones I had ever seen in action were on Iron Chef and although they made it look easy, I knew that done improperly things would be disastrous.

I was just starting my food journey when they hit the market and not yet ready for such a gadget on my counter tops. I was still learning to master the stove πŸ™‚

Now with several years of experience, I thought it was time to see what all the hype was about and boy am I glad I did.

Not only can you create meals in minutes, but the Instant Pot gives you the power to cook food your kiddos will appreciate and remember for years to come!

OK, enough nostalgia here. Let’s talk about these tasty tacos!

I have tested several recipes and this one, hands down, is my families favorite. Complete in less than 15 minutes from start to finish, cooks in 5 minutes, can travel in the lunchbox properly separated and fun for dancers to build-there-own tacos and be creative with food!

And let’s be real here, who doesn’t love a good taco?! They are so versatile, can be made to match anyone’s taste and are one of the quickest meals to prepare. You can always use ground turkey instead of ground beef for a leaner protein. If you’re wanting to add more veggies to your dancers plate, top tacos with matchstick carrots or a quick pickled slaw for a zesty flavor. Craving something other than classic shredded cheddar cheese, go Queso fresco! The possibilities are endless.

For this recipe we used red onion, mini sweet peppers, garlic and a touch of jalapeno for a little kick, but feel free to mix and match ingredients or simply leave it out all together. I mentioned these tacos are versatile right?

By far the best part of this recipe is the time it takes to cook. Once all ingredients are prepped and sauteed, the whole dish is pressure cooked and ready to serve in 5 MINUTES! That’s amazing!

After a long day at work, only one hour at home before rushing to the studio, this recipe is a guarantee that your dancer will be sustained and satisfied to work hard and make the most of their lessons.

Recipe Below:

Ingredients:

  • 1 pound lean ground beef
  • 1 tablespoon Red Onion, diced
  • 1 teaspoon Garlic, minced
  • 1 tablespoon Sweet Pepper, diced
  • 1 small jalapeno, diced
  • 1 tablespoon Cumin
  • 1 teaspoon Ancho Chili powder
  • 1 teaspoon Salt & Pepper
  • 1/2 cup Bone broth
  • 1 tablespoon Olive oil

Instructions:

-First start by prepping all the ingredients. Dice, mince and measure everything out before the cooking begins. This will make the process easy and effortless.

-Set the Instant Pot to the Saute feature. Add the olive oil and allow 1-2 minutes to heat.

-Next add the ground beef, red onion, sweet peppers and jalapeno to the pot. Cook for 3-4 minutes, browning the ground beef and softening the veggies. Add the garlic and saute for 1 minute. Press CANCEL to turn off the saute feature.

-Last, add the dried spices and Bone broth, combining all ingredients.

-Secure the lid to the Instant Pot. Press the Pressure Cook button and set the timer for 5 minutes on Normal pressure.

-Once cooking is complete, Quick release pressure according to manufacture guide book.

-After the pressure is released and the valve has dropped, carefully remove lid and stir well before serving. Spoon this delicious beef over hard or soft shells and top with your favorite fixings!
